Tasty Tuesday--Speedy Chicken Stir-Fry

This is a quick meal to throw together on 
busy school nights. With tasty chicken and noodles, 
the whole family will enjoy every bite of it!

This time of year seems to be super hectic. School is in full swing, kids after school activities are going on, holidays (and planning for holidays) are right around the corner. The last thing I have time for is to be in the kitchen for hours making a wholesome dinner.

I love this recipe because it comes together so easily, is inexpensive and I typically have all the ingredients on hand. This meal comes together in less than thirty minutes and is a hit with everyone. We never have leftovers!

Speedy Chicken Stir-Fry
(origin unknown)

Ingredients
8 oz angel hair pasta, uncooked
2 c. broccoli (frozen or fresh)
1 lb chicken, raw and cubed
1/2 c. Asian Sesame Dressing
2 Tbls. Low-sodium soy sauce
1/4 tsp. ground ginger, garlic powder, crushed red pepper

Directions
Cook pasta as directed on package. Add broccoli to pasta water for the last 3 minutes of pasta cooking time.
Spray large non-stick skillet with cooking spray over med-high heat, cook chicken 6-8 minutes or until cooked. Add in dressing and spices and cook for 1 minute.
Drain pasta and broccoli. Add to skillet and toss with chicken. Serve warm.

Well...it's off to another busy week here at our house. My hubby is preparing for a long hunting trip to Missouri, so its just me and the kids for 10 days. Should be interesting!! Make it a great Tuesday!

Tasty Tuesday -- Chicken Apple Panini's

Yesterday was my son's 8th birthday! Where does the time go? We had a super fun bowling party with a few of his school friends. I even made a cool cake that looked more like a ghost than a bowling ball, but it was still a hit! I'll be sharing the party with you later on...but now, it's time for Tasty Tuesday!

I'm a big believer in Panini's. Sure, its just a sandwich, but it's extra special. With fall in full swing around here, this tasty creation is sure to hit a home run! You can change it up anyway you like, but I enjoyed mine like this:
Chicken & Apple Panini--perfect fall time sandwich

Ingredients
Rotisserie Chicken, sliced thin
Apple, sliced thin
Bacon, cooked
Cheese, I used mozzarella, but next time it will be apple jack cheese
Romaine Lettuce
Tomatoes, sliced thin
Ciabatta Roll/Bread

Directions

Assemble your Panini by layering it with all the ingredients listed above. If you wanted to add a sauce to it feel free (I didn't because I'm trying to watch those extra calories). Next, carefully add it to a hot, grill pan and set your Panini press on top. I got mine from Pampered Chef. If you don't have one, simply use a heavy pan and set your flour canister on top! Grill for about 5 minutes and flip over. Grill for another 2-3 minutes. Slice and serve.

This is a quick and easy meal to put on the table. The great thing about these Panini's is that you can make them for each family members tastes. My daughter just wanted the apples on the side, not with the sandwich.

Tasty Tuesday -- Chicken Bruschetta

Happy Tuesday! I'm back from vacation and excited to share with you my all-time favorite summer dinner dish. This is quick to prepare and everyone in the family loves it. Plus, its made with summer fresh ingredients.


Chicken Bruschetta

I can't take full credit on this creation. I've had this dish many times at a local cafe, Mary's Market, that I decided to create the dish at home. Boy, it sure is a winner!

Chicken Bruschetta

4 skinless, boneless chicken breasts
salt & pepper to taste
Bruschetta
Garlic Toast
Parmesan Cheese

Season chicken with salt and pepper and grill until fully cooked. Grill or bake garlic toast. Top garlic toast with grilled chicken breast, followed by a spoonful of bruschetta. Sprinkle with fresh shredded Parmesan cheese and basil. DIG IN!

Bruschetta Recipe
4 small tomatoes (roma, plum, other garden), diced
1 garlic clove, chopped
1/4 c fresh basil, chopped
salt & pepper to taste
1/4 red onion, diced
3-4 Tbls. (or more) Extra Virgin Olive Oil
1-2 Tbls. balsamic vinegar

Combine all ingredients together and allow to sit at room temperature while preparing and grilling chicken. Serve with chicken or over crusty bread. Top with shredded Parmesan Cheese and extra basil.

Tasty Tuesday--SKINNY Chicken Salad


This has got to be the best tasting Chicken Salad recipe I've ever made and it just happens to be a lighter version! SCORE! I use rotisserie chicken every time which makes for easy prep and delicious flavors!


Chicken Salad with grapes

SKINNY Chicken Salad
serves 4

Ingredients
1/2 c plain non-fat greek yogurt
2 Tbls. Red-Fat Miracle Whip
1 Tbls. Raw Honey
1 tsp. apple cider vinegar
1/8 tsp nutmeg
1/2 tsp Dijon mustard
1/4 tsp salt
1/8 tsp pepper
2 c. chopped, cooked chicken
1 1/2 c. red grapes, halved
1/4 c. chopped walnut or almonds (optional)
1/4 c. chopped celery (optional)

Directions

Combine first 8 ingredients to prepare the dressing until smooth.
 


Add chicken, grapes and if you are adding the nuts or celery, add them now, too. Toss and evenly cover. Refrigerate at least one hour to allow the flavors to combine.
 
  
 
You can serve this on a bed of lettuce, a piece of toast, crossiant or on the flat rounds! Anyway you have it, it is sure to be a favorite!

Tasty Tuesday--Chicken Caesar Salad Sammies

I had another DUH moment last week--I'm starting to worry myself, seriously--I mean, how many can we have before we hit 40??!! Well, whenever I take a trip to Sam's Club, I always buy a rotisserie chicken--they are delicious, huge and only $5! Plus, you can use it for so many things! We are a busy family and the sports season is beginning already. One kid is in volleyball and the other is starting baseball soon, so quick dinners are a must! This took less than 15 minutes to assemble, thanks to the help of Sam's Club's rostisserie chicken!

If you love Caesar Salad (I do!), this is a perfect meal when you don't necessarily feel like just eating a salad. You could even make this into a wrap (which I suggested to the kids, but was shot down!). And even if you didn't care for Caesar dressing, Ranch or Zesty Italian would work too! My mouth waters just looking at the picture and remembing this sammie!

Chicken Caesar Salad Sammies

Ingredients

1-2 cups shredded chicken (depends on how many sammies you make)
Shredded Romaine Lettuce--per taste
Caesar Dressing (we love Ken's Lite Caesar Dressing--its not the creamy kind)--per taste
Shredded Parmesan Cheese--per taste
Croutons (ours are homemade--so easy and delicious)--per taste
Ciabbata Rolls or tortilla wraps

Directions

In a large bowl, combine all ingredients until it looks like a good balance of salad vs. chicken. I just eye-balled the amounts according to our families tastes. Spoon (or pile) on sliced Ciabbata Rolls. Seriously easy. Extremely delicious!

My kids gave this 2 thumbs up and told me we needed to have it again real soon! So, what are your favorite recipes for rotisserie chicken?

Tasty Tuesday--Low-Fat, Easy Baked Chicken Parm

For those of you that are watching your weight or looking for "healthy" and "lighter" alternatives to some yummy comfort food--you're in for a treat. This Low-Fat Baked Chicken Parm is great for the entire family, uses 4 ingredients and comes together easily! You'll want to add this to your dinner rotation!

Low-Fat Baked Chicken Parm
serves 4

Ingredients
4 Chicken Breast, skinless, boneless
1 jar Spaghetti Sauce
4 Tbls Reduced Fat Parm Cheese, divided
1/4 c. Part-Skim Mozzerella Cheese

Directions
Spray a 9x13 pan with cooking spray. Pour entire jar of spaghetti sauce in pan. Sprinkle 2 Tbls into the sauce. Take each chicken breast individually and turn into the sauce, covering all sides. Spoon some of the sauce over the chicken to cover lightly. Cover pan with tin foil and place in a preheated 375 degree oven for 30 minutes. Remove foil, sprinkle with mozzerella cheese and remaining parm cheese. Put under broiler for 5 minutes or until cheese is bubbly. Serve over whole wheat pasta if desired.

Tasty Tuesday--Chicken Fajitas, Rachel Ray Style

Yum-O! That would be the one word that describes this awesome meal! Another word: easy! Seriously, EASY! This is a restaurant quality meal that serves four and costs WAY less than you'd pay at the restaurant! Another word: quick! Yep, I said it, its quick. Meal will be on the table in 30 minutes! I found this recipe in the Rachel Ray cookbook 30-Minute Meals. I've been making this recipe for years, my entire family loves it! Although I've made it with chicken this time, we've also enjoyed it with steak, too!
  So wait no longer, here is the amazing recipe, adapted from Rachel Ray's recipe:

Marinade:
3 Tbls. Hot Sauce
2 Tbls. Ground Cumin
1 tsp. Allspice
2 Tbls. Chili Powder
1 handful of fresh oregano and thyme leaves combined (3-4 stems of each)
1/2 bottle of beer (bonus, you can drink the rest while you cook!)
1 drizzle of EVOO (extra virgin olive oil)
Ingredients:
1 1/2 pounds of chicken (or steak), sliced thinly
EVOO
1/2 onion, cut into strips
1/2 red pepper, cut into strips
1/2 green pepper, cut into strips
salt & pepper to taste
Tortillas
Shredded lettuce, cheese








Pico de Gallo:
4 roma tomatoes, finely chopped
1/2 jalapeno, seeded and finely chopped
1/2 red onion, finely chopped
bunch of cilantro, finely chopped
salt & pepper to taste



Directions:
Mix all marinade ingredients together. Put the chicken in the marinade and allow it to hang out. Heat two pans, a nonstick griddle or grill pan to high, nonstick frying pan to medium high. Drizzle the frying pan with oil. cook the onions and peppers with an occasional shake, until they darken around the edges, about 5 minutes. Sprinkle with salt and pepper and turn off heat.

Place meat onto the hot griddle/grill pan. Turn once, cook until cooked through.
Heat tortillas. Fill with meat, veggies, lettuce, cheese and pico de gallo. Wrap and enjoy!

Tasty Tuesday--BBQ Wings

IT'S TUESDAY!!!!!!!!!!!!!!!! 
I've got a great recipe feature for you today! This is one of my families favorites. In fact, after we had these on Sunday, my daughter said that these might just pass by my ribs as her new favorite! They are simple to put together and can be baked/broiled in the oven or put on the grill. We always do ours on the grill--but keep a close eye on them because they can flare up and then you will have crispy, burnt wings! (I know, believe me!)
You can even make these ahead of time and put them in the crock pot--take them tailgating or to a picnic! Perfect for Super Bowl parties, too! Just make sure you have plenty of napkins handy!


















BBQ Wings

Ingredients
1 pkg Chicken Wings (mine were the Jumbo Fresh Package, I think there were about 12-15 wings in the package)
1 cup brown sugar
3/4 c soy sauce
1 c water
1/4 c. butter
1 tsp. dry mustard

Directions
Melt butter in medium sauce pan. Add all ingredients in except wings. Bring sauce to a boil. Place wings in a container large enough so they lay in a single layer. Pour sauce over wings. Marinate 10 hours or so (overnight is good, too!). 
Bake at 350 degrees for 45 minutes on one side and 45 minutes on the other side. OR grill until cooked through--turning often and watching carefully so they don't burn. Baste with your favorite BBQ sauce.
