Tasty Tuesday -- Apple Cinnamon Pancakes

What a crazy weekend. We had horrible storms Sunday here in Illinois. Luckily, our community was spared this time, but others were not so lucky. If you feel the urge to help those in need, please check out this Facebook Page. Our community went through similar devastation almost 3 years ago, so this is all too fresh in our minds and hearts.

Today on Tasty Tuesday, I'm sharing a tried and true recipe. I'm not sure where this originally came from but it is easy to put together with pantry items you typically already have. It makes a decent size batch too! I usually wrap and freeze the extra for a quick school day breakfast for the kids.

Apple Cinnamon Pancakes

Ingredients
2 1/2 c. Bisquick
1/2 stick butter, melted (I reduced this to 1/4 stick)
1 1/4 c. milk (I use almond milk)
2 T. sugar (I use the amount suggested for Stevia)
1 tsp. cinnamon
2 eggs (or egg subsitute)
1/2 c. finely chopped peeled apple (about 1 apple)

Directions
Heat skillet to 350 degrees. Stir all ingredients except apple until well combined. Add apple. Pour onto hot skillet. Cook until edges are dry, turn and cook until golden.

The house smells wonderful while these are cooking! Here's a tip: before you begin, turn on your oven to 350 degrees. Once it's ready, turn it off. When the pancakes are done, simply put them in the hot oven on a plate or directly on the rack. This will keep them all warm so you can sit down and eat hot pancakes together!

Tasty Tuesday -- Breakfast at our house

Hello! It's Tuesday! I'm sharing a few recipes that I made for breakfast a couple weekends ago. I found both of these recipes over at the blog The Girl Who Ate Everything. Have you visited her site yet? If not, you should. She features delicious recipes, just like these:

These were so good! I filled ours with Nutella as well as Creamy Peanut Butter. I was out of fresh strawberries at the time, but will try those the next time we make them.

I changed ours up a bit. I used cooked bacon bits and shredded reduced fat co-jack cheese. I also used low-fat milk and Egg Beaters. These were amazing. The recipe made a lot so I packaged the rest up and stored them in an air-tight container in the frig for quick weekday breakfasts (just pop them in the microwave for 15 seconds or so). My son calls these egg muffins!

Tasty Tuesday--Easy Breakfast Casserole

It's that time of the week--Tasty Tuesday! I'm sorry if I haven't posted since last Tuesday, but my week was horrible and I decided to spend my free time with my kiddos. Hope you understand. Today, I'm bringing you a recipe I found years ago (with no credit resources anywhere, sorry) but I recently started to make it for my family. It's a winner. And funny that I call it Breakfast Casserole, because as my daughter pointed out the last time we had this, we've never actually had this at breakfast time. This is my standby for Breakfast for Dinner nights (do you have those?--I love them!). What's great about this recipe is that you can really change it up to suit your family, your mood or what you have in the frig--most things work! Serve it along side some fruit and you've got a delicious meal!
Easy Breakfast Casserole



{EASY} Breakfast Casserole

Ingredients
1 pkg. refrigerated croissant rolls (I used reduced fat)
1-2 cups shredded cheese (I use about 1 cup, usually a mix of mozzarella or reduced fat co-jack)
1/2 lb. crumbled, cooked bulk sausage
4 eggs
3/4 c. milk

Directions
Preheat oven to 375 degrees. Prepare pan (I use a round stone casserole, but I'd suggest an 8x8 or 9x9 dish if you don't have one like mine) with cooking spray (not if you are using stone!).  Combine eggs and milk and whisk together. Set aside. Take croissant rolls out of the package and lay them in the pan, creating a small edge up the sides of the dish. Pinch seals together. Sprinkle sausage over rolls. Sprinkle cheese over sausage. Pour egg mixture evenly over dish. Bake 15-20 minutes or until cheese is melted and eggs are set. Let rest 5 minutes before serving.
You could add peppers, onions, bacon, etc. according to the likes of your family.

This would be great for Easter morning because it takes little time to put together--just cook the sausage the night before and then assemble and bake in the morning. Maybe I will serve it for the first time at breakfast on Easter morning!

Tasty Tuesday--Cinnamon Twists

Happy Tuesday! We are expected to get a bunch of snow today. Not looking forward to it. I am so over this winter and so ready for spring! I've got a sweet, easy treat--perfect for snow days! Chances are, you've got these ingredients in your frig and pantry! Surprise your family with these sometime soon--they'll love you for it!

I clipped this recipe out of a Taste of Home magazine many years ago.

Cinnamon Twists

1 pkg. refrig crescent rolls (8 oz)
1/4 c. packed brown sugar
2 Tbls. butter, softened
1 1/2 tsp ground cinnamon

Glaze:
1/4 c. powdered sugar
1 Tbls. butter, melted
1 1/2 tsp hot water
1/8 tsp almond extract

Directions:
Separate crescent roll dough into four rectangles; press seams to seal. In a small bowl, combine brown sugar, butter and cinnamon; spread over two rectangles. Top with remaining two rectangles. Starting from a long side, cut each rectangle into eight strips. 


















Twist each strip several times; seal ends together.


















Place on greased baking sheets. Bake at 375 degrees for 10-12 minutes or until golden brown. Immediately remove to wire racks. Combine glaze ingredients; brush over warm twists. These are best when enjoyed while they are still warm. Kids loved these!

Tasty Tuesday--Apple Cinnamon Monkey Bread

It's funny how a 5 gallon bucket of apples makes you think about different ways you could use them. My family loves monkey bread, so I thought why not add some chopped apples in with all that yummy cinnamony goodness! I was right--this was a home run recipe! I followed my standard recipe that I got out of a Church cookbook (I received this as a bridal shower gift many years ago and I turn to it often--one of my favs!) and simply added chopped apples in the center!
Here it goes:
Take 3 cans of Pillsbury biscuits and cut them up into quarters. Mix together cinnamon and sugar in a large Ziploc bag. Drop a few biscuits into the cinnamon sugar mixture and coat them. Stack them into a well greased Bundt pan. When you've stacked about half of the biscuits, add a layer of chopped apples.

Top with the remaining biscuits. Melt butter and mix in brown sugar and cinnamon and pour over the biscuits. Bake for 35 minutes.

Let set 15 minutes and then invert onto your serving platter and DIG IN!

Here's the recipe:

Tasty Tuesday--Melt In Your Mouth Blueberry Pancakes

I love recipes and I love cookbooks. I have way too many. I have a pantry shelf full of them. One of my favorite types of cookbooks to get my hands on are community cookbooks.  You find amazing recipes passed on through generations or family favorites in those books. Our Bank Cookbook (Recipes You Can Bank On) is where I found this recipe. I just added the blueberries to my recipe.
Get all your ingredients together because this recipe comes together quickly!















I love how they puff up when you flip them over!! These pancakes are fluffy and delicious!














We served the pancakes with grapes and bacon!
