We were invited to my husband’s cousin’s to watch the Bears game over the weekend. When I asked what I could bring, they suggested an appetizer. This is a new recipe that I pinned awhile ago and I thought it would be a good football party app! And it was simple to put together (I only made a minor tweak to the original recipe). We ate it with (orange & blue) tortilla chips, but I think pita crackers or little garlic toast rounds would also be a good dipper too! Here it goes:
HOT CHEESY TACO DIP
adapted from My Kitchen Addiction
1 lb ground beef
¼ red onion,chopped
Clove of garlic, chopped
8oz lowfat cream cheese, softened
1/2 c. light ranch dressing
1 Tbls chili powder
1 tsp cumin
3 oz. pepperjack cheese, shredded
3 oz. co-jack cheese, shredded
Preheat oven to 400 degrees. Brown ground beef, onion and garlic. Drain and set to side. Combine cream cheese, spices, dressing and ½ of the cheese. Mix in beef until combined. Spread into pie dish that has been sprayed with cooking spray and sprinkle with the rest of the cheese. Place in preheated oven and cook for 15-20 minutes or until cheese is golden brown and bubbly. Let rest 5 minutes before serving.
